This exceptional lot features a blend of Mundo Novo and Catuai varietals that initially undergo natural and pulped natural processing. To decaffeinate the beans while preserving their distinct origin characteristics and flavor profiles, the coffee undergoes the gentle Water-Ethyl-Acetate method, commonly known as the "Sugarcane" or "E.A." process.
Sourced With Purpose
Unlike harsh chemical treatments, the Sugarcane process utilizes a naturally occurring substance (Ethyl-Acetate) extracted directly from sugarcane to safely bind to and remove caffeine. The green coffee is first soaked in water and steamed for about 30 minutes to expand the coffee cells and open their pores. The beans are then carefully washed in the sugarcane solution, which naturally attracts the caffeine.
Over a meticulously monitored cycle, the tanks are emptied and fresh solution is introduced for another eight hours to ensure saturation. A final steaming completely removes the natural solvent, leaving the beans ready to be dried, cooled, polished, and rigorously quality-controlled before they ever reach our roaster. The result is a pure, uncompromised specialty coffee experience.
